Also known as Chinook, king salmon are prized for their high oil content and firm texture. Why are some kings red and some white? White kings do not absorb pigments from the crustaceans they eat. This leaves their flesh a smooth ivory color and gives them a creamy, delicate taste. Nutritionally, white and red king salmon are identical.
